High level job research

I found some high level jobs I may be interested in such as...
-Audio Engineer
Required senior audio engineer who has experience recording and mixing television commercials or promos. Must have clients who you work for already. They don't list software or anything like that.
-After Effects Artist
High profile commercials and media projects. Experience is required with 3D cameras, text design, and compositing. Must have reels to be shown.
-Video/broadcast Engineer
Require knowledge of Mac OS X Leopard, Apple Hardware, Final Cut Pro Studio 2, QuickTime 7 Conversion/Encoding, Networking and File Transfer Protocols, and Multiple File Format Conventions and Conversions. Plus Adobe After Effects 7, Adobe Photoshop CS2, Adobe Illustrator CS2, Microsoft Entourage 2004, FileMaker Pro 6 and 9, AppleScript, Web Authoring (HTML, CSS, GoLive CS2), DVD Authoring (iDVD, DVD Studio Pro), SQL Server Integration, Microsoft Office , Microsoft Windows OS, and Chyron Lyric.

In order to get to the level of requirements for jobs like these I would really have to find an entry level job in the same field, such as an assistants job, where I can get some hands on work possibly with these softwares, and build a portfolio.
